I got some free yeast, WLP530, about a week ago and have decided to do a cider with it. I haven't been able to find any info on anybody using a belgian yeast for a cider.
My recipe:

3 gal fresh pressed store bought apple juice
2 lb missouri wildflower honey
WLP530
Yeast nutrient
Yeast enegizer

The yeast is about 6 months past its use by date so I'm going to make a 1/2 gal starter out of apple juice and enegizer to see if it will even start up. If it starts up I'm planning on fermenting lower around 60-62deg to get the spicy, phenol caracteristics from the yeast and to aviod any banana esters.

Any input or suggestions would be greatly appriciated.:mug:
