It depends. First of all only add it if plan on sweetening your wine prior to bottling.

If you have a wine that went through MLF (malolactic fermentation), then yes, it will give an off flavor.
 
I'm a very beginner wine maker. I wanted to back sweeten a muscadine/apple juice wine that was fermented with wine yeast, but I am reluctant because of what I've read about potassium saorbate.

It's probably your best bet unless you want to sweeten with sugar substitute.
 
It does impart a slight flavor to the wine, but some people can't even taste it so I wouldn't worry about it if you use it in the right "dosage".
