I pitched WLP530 at 64F and raised temp +-2F everyday untill 83F after 7 days.
At this point gravity was 1.016 after candi sugar was added (OG : 1.068). I let it sit at 83F for another 7 days. Gravity is now 1.011 and stable. The plan is to bottle in two weeks time.
Do I let it sit at 83F untill bottling or at room temp (+-53F-60F) ?
Or doesn't it matter ?
