How to figure out if my PID can control element power

The Auber PIDs have the following language:

"A manual control function is also added that allows the user to control the heater power just like a dimmer switch for a light bulb. This is a useful function for the beer brewer to control the strength of boiling."

Thing is I have a couple older PIDs I want to use. What do I look for in the manual that indicates that the PID can control the element power?

Looks like it does, below is a screen grab from the manual (http://www.omega.com/manuals/manualpdf/M2897.pdf). Is the element power somehow controlled proportionately by the 120v power sent to the relay?

Yes, "SP1 manual percentage power control" is what you want. It turns the element on and off, with the length of time it is on compared to how long it is off determined by the percentage from 0 to 100.
