Once I rack my wine the first time, how long do I let it sit before I rack it again? And how many times do I repeat this process? I'm making easy home brew, juice yeast and sugar

Let it sit until completely clear. Rack it when you have lees 1/4" thick, or after 60 days if you have any lees at all.

Once you go 60 days with NO new lees, it's ready to bottle.
 
So once it is done let it sit for 60 days and rack it then keep racking until it is clear?
 
Yep! Rack every two months till there isn't any yeast on the bottom. Not even a thin layer. It takes longer for all of to drop out than you think. It will probably take at least 3 rackings.
