I am making an american amber which calls for cascades FWH. I have a ton of centennial. Can I get away with subbing them for the cascades?

Yes. Even better, use both.

In all of the hop guides I have seen, Centennial is listed as the best sub for Cascade (Papazian, BeerSmith, Palmer, etc.)
Just for this weekend's batch. My LBHS sells hops for 3 to 4 bucks an ounce.Why??? They aren't endangered or picked by slave labor.

I interchange them a good bit. Centennial is higher in AA though so you'll need to account for that.
