I made another replacing Chinook with Cascade, and went from .25 to .50 on the Centennial. How would you think that would turn out?

From what it looks like, you'd be brewing a honey blonde ale. According to this, for having an O.G. of 1.054 and 16 IBUs, you would get a VERY malty beer. If i were you i'd toss in maybe half a pound of carapils, and half a pound of crystal (40L maybe) and definately up to hops!

Here is your recipe with added specialty grains and hops:

Wow, you REALLY upped the hops on that one!
 
I brewed an APA that is somewhat similar to yours. I used Chinook as my only bittering hop along with centennial and one other I can’t remember right now for finishing (recipe is at home and I’m at work). I ended up with a similar IBU level, but to me the Chinook was too harsh of a bitterness, for me. Oh, yeah! It was Amarillo as well. And the hop flavor was heavy on the citrus. I will post my recipes when I get home for lunch.
 
I've always enloyed a slightly maltier pale ale myself, and think you'll like the amber addition. It may not be "true to style," but brew what you like to drink, right?
would 1# amber LME make enough of a difference? How about playing around with the hop schedule instead?

*edit*
I was just reading this thread and the experts basically said that amber extract is nothing more than pale extract with a bit of crystal added. So, adding the amber extract is probably superfluous. I would do a total of 7# pale LME for your APA 1 recipe.

As I mentioned earlier, I thought thew Chinook was a little harsh. That is just me, but I have read that opinion other places. I would either combine the bittering with Cascade and chinook or go all cascade for bittering and keep the centennial and liberty.

Also, you might want to change the 1lb of amber LME to amber DME, incase you can't by LME by the pound, or try steeping some crystal malt?
