I am going to make the House of Paine American Pale Ale that was in the last issue of BYO. When I went to my LHBS, they had everything but the simcoe hops. So I just got some extra cascade hops to substitute.

I feel that I may be settling by not having the simcoe. My only other option right now is to use the .5 oz of summit hops I have left over from an IPA. Here's the original recipe.

What do you think?
 
I'd use the Summit. Bittering hops don't add much flavor or aroma, but the AA% is important.
