just finished building a wood paddle for all grain, should i leave it natural or use butcher block oil? went to local wood working store and they said the oil should have no problems with the grain. any ideas

There is an article about this in a back issue of BYO on this. It recommended not using oil as it may affect head retention.
 
I would say not to use any oil. it may not have any effect on the mash, but it could possibly kill the head retention of the final product.

Need to do some more research on it but i do know that oils can kill the read retention in a beer, main reason to not use real nuts in a beer too.
