Thoughts on this yeast combo?

Boulevard Brewing Saison Brett Clone

Wyeast 3724
White Labs Brett C
Hill Farmstead Anna Dregs (5 yeast types with some Brett B)
Orvan Dregs (they condition with brett)

Is that too much kitchen sink? I plan on keeping this one in the primary for 21 days then secondary for 3 months.
 
Yea, I'll bet you Boulevard doesn't pitch all that business. Stick with one that you think will match the character of the beer best.

Option 1: 3724 primary. Add wyeast or white labs brett b at bottling.

Option 2: Use what you planned, but also spit in it, add ranch dressing dregs, and two chicken bones.

I vote option 1. And don't be slavish about the times. It might not need 21 days. It might need 28.
 
Nothing wrong with pitching lots of strains of Brett, but you'll never be able to reproduce it.
