I really, really, really want to brew an English brown but have no way of getting my hands on any marris otter this weekend. Is this beer gonna suck with american pale? Will I be able to tell a big difference? I'm sure it would make a nice beer with the grainbill, but using english hops I'm worried about the pairing.
 
I'd try and bump up the "maltiness" quotient some other way; can you get your hands on some Munich or melanoidin/aromatic malt?

I have biscuit, crystals, special b, dextrine, caramunich, caravienne and that's it.
 
Maybe add a touch of biscuit and caramunich to make up for it. A couple ounces of each?
 
OK, went with caravienne and biscuit. I was actually out of caramunich... and I don't have crystal 60, so upped the crystal 40 amount just a tad. Oh, this a sketchy attempt at Orfy's Hobgoblin clone (without crystal 60, marris otter or nottingham). It's close on the OG, IBU's and SRM though:

EDIT: Just backed down to .15 with the caravienne and biscuit. I really don't want their flavor profiles to come through much, just the maltiness.
