I brewed my favorite beer which is an Oktoberfest and was optimistic that I would wait till October to tap the keg. With three kegs I don't run out of good homebrew on tap but I guess I'll never know what the traditional lagering of this beer will be. I've read that it's supposed to be even better but unless I get more kegs or drink less I may never know.
 
Tho shall let the beer age...



Put it in the corner, pack a ton of crap around it and wait. That is how I do it with my Belgians. If its easy to get to, well you know the rest.
 
I had 3 then bought a1.75 and a 2.5 gallon for experimenting, I hate bottling, although i still do.
Just picked up 2 more 5 gallons so i can rack a couple more carboys, then i feel bad that i have empty fermenters.
Guess i need more corneys.
