I gather back in the 70's-80's there might have been aluminum ones for awhile, but they are pretty rare now-days. Ones you see now are almost certainly stainless steel.
 
There was a guy that posted the other day that he had one with a plastic lid. I thought he was crazy, until about a half dozen others chimed in and told me the plastic lids were common from the actual Cornelious company in the 80s.
 
There are some newer plastic ones, and some older ones that are aluminum (both are different shapes than standard sankes), but for the most part, a standard looking metal sanke is stainless.
