So here's my recipe. Before the purists bite my head off, I know it's not a true dunkelweizen. I wanted something with abig body and some kick. My first experimentation.

6.6lbs wheat LME
3.3lbs Munich LME
6oz crystal 40
6oz crystal 150
3oz carafa III dehusked
1oz Hallertau 4.7

I'm going to do a 5.5 fermenter batch. Boil for 70 minutes with the grains steeped at 160 for 40 mins. It's a dunkel whiz with a kick hopefully around 5.7 abv

I'm using 2 vials of wlp300
 
Finished with an OG of 1.068 and a sweet beer. Lets see what happens!
 
Bottled tonight after 15 days in fermenter. Check FG the last three days, 1.020 on the money. Beer starts sweet, but finishes dry. Can't wait to try one next week! Carbed it to 3 volumes.
