I'm brewing my second wheat beer, and much like the first, I have a gigantic krausen. It's out of hand.

Do I have to wait until the krausen has totally dissipated before I can rack it to a secondary? (It took a solid month to disperse last time.)
 
I remove the krausen 3 or 4 times a day - always have done which is why I ferment in a plastic bucket with tight fitting lid.
 
carlin was a boss. everything i've ever wanted to say has already been said by him. plus, oregon is the most byutiful, underrated state in the union. i wish i were at the deschutes in bend right now.
 
Technically it increases the risk of infection, but if your spoon is sterilised and you avoid hair or nose drips falling into the wort, you will be fine.
