Ok so I'm going to brew an imperial stout that calls for 1.75 ounces of summit hops. Went to my lhbs and they didn't have summit so we looked at the chart and it said amarillo as a substitute. So my question is that I noticed the alpha acids are pretty different from the two, so would I just add more amarillo as my bittering hop and also is amarillo the correct substitute? Thanks.
 
I am guessing the recipe was summit because of the super high alpha. If you are using them for bittering, you can use any hop. I wouldn't waste that nice amarillo on bittering. Get any high alpha clean bittering hop you can find and use that- Warrior, columbus, nugget, apollo, etc....
