So there are some really good resources out there that tell what kind of flavor yeasts and hops bring to the party, right? Does anyone know of something like that for specialty grains?
 
I need to get a paper copy of Palmer's book...

Great resource, helps a lot with a recipe I've got forming in my head (an Oktober-festy ale). Thinking some pale ale malt as the base, maybe a pound, pound and a half of Munich, little bit (half pound?) of Biscuit, some crystal 60L, and 2oz black patent for color (along with DME, it's a partial-extract recipe).

The ultimate in recipe formulation texts is Daniels' Designing Great Beers. It will change the way you brew, and you can take that to the bank - the money bank.
