this does it. i'm getting off my ass and starting my smoker build.

is that cedar planks wrapped around fish and asparagus? where did you get those thin sheets?

cedar sheets wrapped around salmon and asparagus! i actually go them from woot.com some time last year. i'm down to my last few though and i've got to find some more. i really like them, although they aren't quite the same as cooking on planks. far more subtle.

That's a lot of pig in the 1st pic...5 butts?

What are the big cylinders in the 3rd pic from the bottom...bologna?

Thanks, man! Kudos back at ya!! I'm a Weber Smoky Mountain guy; I see you're running a green egg. How do you like it?

In the center of your fourth picture - is that a fatty?

Well, I'm not nearly the photographer (or smoker) as you guys, but here are a few pics from last thanksgiving's smoke:

That is really a brilliant idea!

I was trying to think of a way to sterilize them, maybe pressure canning... But I don't know if I'd trust beer bottles full of BBQ sauce in a pressure cooker.

I just leave them in the fridge. I gave a couple away to friends.

Wow, this thread... is so full of WIN!

I must get an egg. I do love my kettle, but I have egg envy. Also, I feel compelled to grill EVERY WEEKEND. I am open to grilling almost anything. Sometimes I just get the coals hot and go through the fridge looking for stuff to throw on there. Almost as bad as brewing.

you had to do it to me :D . looking at the first half of the posts, now i HAVE to smoke some brisket and ribs this weekend

i love my eggs!

i can't even remember what or how i cooked before i got them. i got my first one 3.5 years ago and have added two since then. i'd still like to have a medium one.

here is some more recent stuff since i got a new camera and stopped using my phone......

that was the first time i used any corn starch on the wings and they came out with CRISPY skin, just like the fried ones i remember and loved from when i lived in memphis.

i'm the same way man. i have a new baby, so brewing has been pushed back quite a bit. hopefully in the next year or so i'll be able to get back on it. in the meantime, i'm a grilling fool. i also will throw anyhing on a grill. hahaha.

please to explain, sir. the wings look great. i wanna give em a go soon.

i rubbed them down the night before and about two hours before i put them on the grill, indirect at 325, i sprinkled cornstarch on them and shook them up to coat them evenly. it was really inexact as far as measurments go. i had three dozen drummettes and i basically opened the cornstarch and sprinkled (guessing) 1/4 cup on them.

i had remembered reading about it on a grilling forum, but had never tried it and didn't remember any particular measurments, so i just winged (pun intended) it.

That one is a pizza fatty...Italian sausage, filled with pepperoni, grilled onions & bell peppers, pizza sauce, and mozzarella.

what is a sweet onion pie?

Just what you'd think...the filling is made from sweet onions. It's sometimes called Vidalia Onion Pie, or Maui Onion Pie. It's really more of a quiche than a pie, but real men don't put quiche on their smokers. ;) There's a great pictorial here: Maui Onion Pies on the Egg.

this turned out better than i expected..... chorizo wrapped pork tenderloin, no seasoning on the loin.....

here i was thinkin there was some secret awsome bacony onion abomination. :cross: sounds a bit like the quiche that i made for thanksgiving last year. mine was chestnut and maple smoked bacon. quite tasty.

cooked some fresh salmon with olive oil and dizzy pig raging river and shakin the tree and some tuna with soy and sesame seeds along with a couple avocados with olive oil and shakin the tree. made some potatoes and onions with some olive oil, garlic and simply marvelous season all. i'm stuffed.....
