I have done a couple batches of cream ale lately that has been very good. The recipe is basically Light ME, 2 oz of cascade hops, and 1/2 lb of Carapils steeping grains. The recipie averages about 4 - 4.5% ABV and I would like to get it closer to 5.5 or 6%.

What is the best way to do this? Add more ME to raise the OG? Will I need a different yeast (currently Wyeast 1056) or just a good size starter?

Thanks

How many pounds of extract are you using? You can definatley bump up the ME by 1/2 to 1 pound to raise your gravity. 1056 yeast will be fine. And a far as a starter goes, I make one EVERY time I use a liquid yeast.

I'm using about 6 pounds of light liquid extract now. I've been making starters for my last few batches, and it is so easy, it will be a regular thing for me too except of course when using dry yeast.

Will upping the ME by 1/2 to 1 lb raise the gravity a full 1% or so?

Thanks for the help.
