I have done a couple batches of cream ale lately that has been very good. The recipe is basically Light ME, 2 oz of cascade hops, and 1/2 lb of Carapils steeping grains. The recipie averages about 4 - 4.5% ABV and I would like to get it closer to 5.5 or 6%.
What is the best way to do this? Add more ME to raise the OG? Will I need a different yeast (currently Wyeast 1056) or just a good size starter?
