So I was just looking around at some recipe's today and I came across a few that are using multiple pounds of different SRM crystal in one brew. For example, newcastle uses 20L, 60L, and 80L in theirs. What does this do for a recipe???

Everyone is darker and adds more body.
 
Each one provides different flavours. The darker the crystal malt the more you get the toffee, raisiny and even some fruity flavours and as RICLARK said you also get darker colours.
