This will be an extract w/steep, it is kind of a variation of the last hefeweizen i did...

1lb weyermann pale wheat
8oz munich 40
6lbs wheat LME (65% wheat-35%barley)
Wyeast 3068
As for hops: Are there any other acceptable hop substitutes excluding Tettnang and Hallertau anyone would suggest using as a substitute? Midwest is out of both until December and alot of the 'acceptable' substitutes arent of noble variety.

Any critique, suggestions, comments are welcomed!:mug:

the only changes from the recipe i did before was the addition of the Munich, and obviously using a different hop

there are spalt hops available in abundance, i have never used them but i can give it a shot.

i really need to move to all grain....this extract business is too expensive
 
The Hallertau area in Germany is between Ingolstadt and Munich.

The Spalt are is west of Ingolstadt and as far south as Treuchtlingen. Spalt's are used in Hefe weizens also. We still have friends that live in Treuchtlingen.

The Tettnanger area is way south near Lindau just on the northeast edge of Lake Constance (Bodensee). There's also a couple nice casino's in Lindau.

Saaz are usually used in Pilsners.
 
yea of those three german nobles spalt is the only one i have readily available, im going to give it a shot, ive really taken a liking to the hefeweizens so hopefully this will be as good if not better than the last.
 
I know what you mean. I've made about 9 batches of HW this year.

I still have over 2 lbs of Hallertau hops left from this summer...:D They are 6%, but I only use 3% AA per batch. These should last me for 64 more batches after I finish off the other lb.

so hb99, since were on the subject, this recipe aside, do you have any other (hefeweizen) recipes i should try my hand at?
