looking for an apple crisp ale recipe

So you want a recipe for an apple ale?

I talked to a brewer at Two Brothers .. they have an awsome apple ale.

They told me that they brew up an ale (didn't specify) and at the same time brew up apple wine using champaigne yeast (probably EC-1118) then they mix them together in the secondary.
 
I didn't think about that, might be worth a try.

I was thinking about throwing in some granny smiths in, peeled and sliced, in the last 15 minutes of my boil and letting them sit in during the first fermenting.
 
Maybe some oatmeal and cinnamon? Maybe prime with brown sugar? Replace .5gal of your top off water with .5 gal Tree Top apple juice? Apple crisp usually has a bit of lemon zest or lemon juice in it, maybe zest of an organic lemon in your secondary for a week?

Just throwing out ideas, good or bad.

0 lbs, 8 oz Briess 2 Row Caramel 40
0 lbs, 0.08 oz Crisp Chocolate Malt
.45 oz @ 60 mins Fuggles Pellets, UK
.1 oz @ 10 mins Fuggles Pellets, UK

2 ea @ flameout Apples
1 ea @ flameout Cinnamon Stick

.5 ea SAFALE US-05 American Ale
