Mashing a recipe that calls for 11.75 lbs. of grain. Papazian suggests 1 quart of strike water for every pound of grain. He then suggests .5 gallon sparge water for every 1 pound of grain. Even after boil off and grain water retention I am left with about 7 gallons of wert. I am shooting for a 5 gallon batch with an OG of 1.050. Do I need this much sparge water with an infusion mash?
 
You can't really use a ratio measurement for sparge. Sparge whatever it takes to get your desired preboil volume. Incidentally, 6.5 total preboil gallons is about right. You should boil off about 1.25 gallons in 60 minutes.
