Im doing Jamil's "hop bursting" recipe and need some help. I have soft water that's only good to 10-12 srm. I don't know squat about water yet, so should I add some gypsum? It's the only additive I have on hand.

Here's the recipe and my water report.

Batch Size: 5.75 gal
Boil Size: 8.21 gal
Estimated OG: 1.064 SG
Estimated Color: 16.5 SRM
Estimated IBU: 34.5 IBU
Brewhouse Efficiency: 80.00 %
Boil Time: 60 Minutes

Ingredients:

8.0 oz Caramel/Crystal Malt -120L (120.0 SRM) Grain 3.92 %
8.0 oz Victory Malt (25.0 SRM) Grain 3.92 %
4.0 oz Pale Chocolate (200.0 SRM) Grain 1.96 %

Check google for brewing water additions, and you should find a spreadsheet or other on-line calculator tools. I think howtobrew.com has a section on it too.

I think gypsum is good since it has sulfates (if I recall correctly) which enhances hop bitterness. Just don't over-do it.
