I'm going for a big hop profile (especially aroma) but I want it well-balanced and with a head that sticks. My thinking is, with Mosaic as my dry hop, the Simcoe at 1 minute will add just a little extra complexity to it since they're related... this is based on virtually nothing.
Any thoughts on this or the rest of the schedule?
