Help with new IPA recipe?

I'm going for a big hop profile (especially aroma) but I want it well-balanced and with a head that sticks. My thinking is, with Mosaic as my dry hop, the Simcoe at 1 minute will add just a little extra complexity to it since they're related... this is based on virtually nothing.

Any thoughts on this or the rest of the schedule?

Grains steeped @ ~155F 30 min.:
2 lbs Caramel/Crystal Malt - 20L
1 lbs 8.0 oz Cara-Pils/Dextrine
1 lbs Cara 45 (Dingemans)

3 lbs Extra Light Dry Extract [Boil for 60 min]

1.00 oz Centennial [10.00 %] - Boil 60.0 min
1.00 oz Centennial [10.00 %] - Boil 30.0 min
4 lbs Extra Light Dry Extract [Boil for 20 min]
2.00 oz Cascade [5.50 %] - Boil 20.0 min
1.00 oz Simcoe [13.00 %] - Boil 1.0 min
2.0 pkg Northwest Ale (Wyeast Labs #1332)

3.00 oz Mosaic [12.00 %] - Dry Hop 7.0 Days

Est Original Gravity: 1.066 SG
Est Final Gravity: 1.019 SG
Estimated Alcohol by Vol: 6.1 %
Bitterness: 67.7 IBUs
Est Color: 12.5 SRM
 
That's a gigantic amount of caramel malt. I'd back off to no more than a pound total. The carapils isn't really necessary, most extract already has some in it.
 
Cool, thanks... I wasn't sure about how much cara. I don't want it to end up sweet, but I want the malt to balance and, like I said, I want nice head retention. My experience with a previous batch was that the head really didn't stick like I wanted it to. I thought the dextrine would help with that.

So I knocked the Crystal down to a pound and the Cara 45 down to a half pound.

My LHBS guy said that he has been moving his flavor additions in big IPAs to 5 minutes in the interest of balance. Any thoughts on bumping my 20 min Cascade down to 5 or 10?
 
I've done only 60 min, 10 min, and flameout additions (plus dry hopping) in IPAs before and it's been great. So moving everything later should work well if you want to do that :mug:
 
i would go:
1.00 oz Centennial [10.00 %] - Boil 60.0 min
1.00 oz Centennial [10.00 %] - Boil 20.0 min
1.00 oz Cascade [5.50 %] - Boil 10.0 min
1.00 oz Cascade [5.50 %] - Boil 5.0 min
1.00 oz Simcoe [13.00 %] - Boil 1.0 min

1.00 oz Mosaic [12.00 %] - Dry Hop 7.0 Days
1.00 oz Simcoe [13.00 %] - Dry Hop 5.0 days
1.00 oz Mosaic [12.00 %] - Dry Hop 3.0 Days


i think you are better off with the later additions in the boil and i would also mix the dry hopping schedule up between mosiac & simcoe over a few days to add more dimension to the dry hop.... my 2 cents
