My girlfriend loves Frambozen from New Belgium, and I have to admit I'm pretty fond of it myself. I'm trying to come up with a clone recipe based upon taste, and based on the info found here: http://www.newbelgium.com/beers_fz.php
Here is what I have:
6 lbs LME
6 oz cara pils
6 oz crystal 90
6 oz crystal 60
6 oz chocolate malt
Steep all grains @ 155 degrees for 30 min
.75 oz Magnum (7% AA) 60 min
.25 oz Magnum (7% AA) 5 min
Wyeast 1028 (using this because it is a good all around yeast and I have some I harvested from a previous cream ale batch)
Add 5 lbs raspberries after initial fermentation has died down
To try to figure the sugar content from the raspberries I put 1.5 lbs of corn sugar into Pro Mash. With a 2 gallon boil Pro Mash calculates this at 17.7 IBUs which is right in line with what New Belguim has listed on their site, and I'm hoping this should come pretty close to the real thing. Comments????
