I Want to Brew a Guinness Clone.... Suggestions?

Ok, I should start by saying, I am not anywhere near ready to invest in a nitrogen system, but would like to get as close as possible to a Guinness DRAUGHT clone as possible. I would prefer an extract recipe as I am not yet ready to go all grain either, hopefully this fall I will.

So any suggestions?
 
Honestly, it's a pretty challenging beer to replicate. I've got an extract recipe from one of my BYO issues, but it involves a lot of work. You have to basically make one batch of beer lighter in color, then another batch of beer that's dark. Allow part of one of those beers to sour with brett yeast and then add them all together at bottling time. This is the only way other than using acid malt to get the "guiness twang".

You could start with the similar thread boxes below. And I'm sure there's a ton more on this topic. And in the BYO 150 clone recipe's book there is a clone as well.

As for getting the creamy head, you will not get an identical creamy head without a stout faucet and a beergas system.
If you are kegging with co2 you could get a creamer faucet head for like $25 on amazon. It will not have the cascade effect however it will give you a creamy head.

I have also read that at a low carbonation level you can pour a beer then shoot a syringe full of air into the beer. The force of oxygen will give you a cascade effect. I have never tried this method so I can not tell you if it works or not. The only thing that you would have to worry about is if the beer is too carbonated and you push air into it, it would overflow and cover you with delicious stout.

Actually you use a syring full of the beer and it works, I have tried it with a straw, works fine.

I know I won't recreate the texture but if I can get the flavour close, I was thinking about bottling half of it with half the priming sugar or even bottling before fermentation has stopped with no priming sugar. If I prime, I plan to use Kreamy X

My fear with the Guinness Clones is many of them do not specify if they are cloning teh Extra Stout or the Draught style.
 
that makes more sense. It was a long time ago when I was reading up using widgets from guiness cans in homebrew bottles.
 
I am certainly no expert and have never tried it. I have read everything from "guiness puts a drop of liquid nitrogen in each bottle/can" but I also have read that the pressure from carbonation forces the beer inside of the widget and when the bottle is opened it releases and shoots the beer through the holes giving it the effect of a stout faucet. If this is the case, I dont see why they couldnt be sanitized and reused. I have not experimented with this but would love to someday
 
Phoenix60 - thanks for the link. I've bookmarked it and may try that - I've made some good beer from AHS mini-mash kits before, so expect this one would be good, too.
 
This is the recipe from BYO for guiness draught. The recipe I mentioned that involves basically three different beers combines was for the Guiness Foreign Extra clone which is strictly an all-grain recipe.

OG - 1.038 FG - 1.006
IBU - 45 SRM - 40 ABV = 4.2%

14.5oz. Light DME
2.66lbs Light LME (late addition)
1lb 6oz. UK pale malt
10oz. Flaked Barley
1lb Roasted Barley
12AAU East Kent Golding (60)
Wyeast 1084 or White Labs 004

Placed crushed grains and flaked barley in a steeping bag. In a large pot, heat 4.5qts to 161F and submerge grain bag. Let grains steep for 45 minutes at around 150F. While grains are steeping, begin heating 2.1 gallons of water in your brew pot. When steep is over, remove 1.25qts of water from brewpot and add to the "grain tea" in steeping pot. Place colander over brewpot and place steeping bag in it. Poir diluted grain tea through grain bag. Heat liquid in brewpot to a boil, then stir in dried malt extract and hops and begin the 60 minute boil. With 15 minutes left in boil, turn off heat and stir in liquid malt extract. Stir well to dissolve extract, then resume heating. *keep boiling clock running while you stir*. At the end of the boil, cool wort and transfer to fermenter. Add water to make 5 gallons. Aerate wort and pitch yeast. Ferment at 72F. Rack to secondary when fermentation is complete. Bottle when clear.

Funny, I seem to have seen them specified. In fact iirc, though I don't have it in front of me, the BYO magazine has a couple versions, one might be the export. But anyway, I would trust the ones from that mag, or clone brews.

The recipe I posted above is directly from the BYO 150 mag. The magazine lays out an extract and an all-grain recipe. As I said, the above recipe is for the draught clone. They also have the recipe for Foreign Extra, but it's only in all grain.
