what am I fermenting?

I brewed an all grain pale ale Saturday. After collecting the mashed wort in my boil kettle, I decided to run a little more sparge water through the grains and collected about a gallon of wort. I planned on putting in the frig and cooling it and boiling the next day just to see what it taste like. Kinda a no chill experiment. I placed an airlock on the gallon jug to seal it. Well i never got around to chilling or boiling it. I left it sitting in my 70 degree basement. When I went down there today I found it fermenting and had a nice kraeusen layer. Just wondering what this will produce. It smells pretty good. Kinda got a grain / whiskey smell.
 
Congrats, you've brewed a Berliner. Now rack it into a 1 gallon jug and see how you did in a year.
 
I'm letting it finish out it's fermentation and I will rack it.. It has no hops in it, so should I dry hop it a little?

Maybe a tiny bit of hop tea for bitterness around 5IBU but thats all I'd do
