We are looking to do a pecan porter after drinking 512's on vacation in Austin. I picked up the Better Brew smoked porter kit, it's in the primary right now. We have some shelled pecans, any suggestions? I'm worried about contamination, as well as oil or off flavors. Thanks for any help.
 
I would have added the pecans to the steeped grains. That would have taken care of any contamination worries. The oils can degrade head retention in the beer, but with a porter you aren't looking for a huge head anyway.

If you are adding the pecans to the secondary, I would boil them first to make sure they are sanitary.

interesting. let us know how it turns out. pecans would add an interesting bitter "mouth-pucker" to the brew.
 
roast them first. It'll help get out the oils and bring out the flavor.
