Mashed w/1.33qt/lbs of water @ 170f to get my desired mash temp of 156f, hold for 60 minutes, then I did a heat mashout by raising the mash temp to 168f for 10 minutes.
Sparged with 3.87g of water @ 180f.

Started with 7.75g of pre-boil liquid and boiled it vigorously for 90 minutes. Chilled and pitched yeast, fermented at 68f.
After the initial first week of fermentation added my 5oz of dryhops.
Racked off the conical after 38th day of fermentation to a 5g corny keg, did a week of condition at 38f, filtered with a 1 micron filter, then set my PSI to 12.5 and continued to carbonate for a week.

This is my competition IIPA. I'm sending it off to longshot 09 with a few other beers on Monday.

This beer is ****ing awesome, full BJCP style review follows. It is reminiscent of Hop15, Pliny the Elder, and Hop Henge :)
hopinator.jpg

Appearance: A hazy but clear copper with a finger of thick almost white head that mostly fades but a crown remains, light lacing.

Aroma: Hops hops and more hops. Amazing delicious delicate hops. The simcoe dominates the apparent hoppiness, but you can get a whiff of summit and green bullet as well. Notes of mango and tangerine amidst all the lupulin.

Flavor: Big smooth pleasant hoppy bitterness, showcasing a complex hop flavor profile. There is a subdued complex but deeply rich malt flavor that basically serves as a stage to bring the hops together to do their amazing thing. Big tangerine centric citric hop flavors, a veritable bouquet of hop flavors.

Mouthfeel: Moderate body, good balance but slightly on the dry side, but its fairly thick and heavy in a good way. Pleasantly bitter aftertaste fades to residual hoppy goodness.

Overall: Wow, this is a huge friggen IIPA, hoppy and bitter in all the right ways. With how big this beer is I don't think I can brew it all the time, but it will be a regular brewing for me.

Recipe roundup
This single beer has been a huge focus for me in the past few months getting it prepared to take on Longshot 09. I did a pilot brew for it (Hopicus, a damn good IPA in its own right) and then basically drank the whole beer with buddies to focus on how to improve it, and I LOVED Hopicus to begin with. The result of the changes to Hopicus were so drastic, its a completely different beer in every way, and thus was born Hopinator.

Longshot starts soon, and I feel sorry for anybody else who has entered Category 14, I'm afraid I've got it locked up.

Well, I guess I was right. Hopinator took best of category 14 in the Sam Adams Western Region. I can't wait to get my tasting notes back. :)

I'm rebrewing this beer today for some upcoming competitions. I love this beer!

I received two of these from saq yesterday at the Stone sour beer tasting, and I thought I'd throw up my own tasting notes for this here.

Appearance:
Pours a medium amber with a half inch head which settles down to a thin film, with decent lacing that lasts throughout the pint.

Aroma:
Large hop presence (duh) with a distinct exotic citrus aromas, and lots of passion fruit.

Mouthfeel:
Crisp and dry, but enough malty fullness to ballance it out, not thin like PTE, you can almost feel the hop oils.

Taste:
Early bitter sting, with a rich citrus and piny hop presence. Slight biscuit/bready tones in the aftertaste and back of the pallet.

Overall:
Very good IPA, the aroma is outstanding with all of that passionfruit and tropic fruit in there, very enjoyable, I may have to make this beer now.

Thanks FreezeBlade! What you had was batch2, which is a slightly modified streamlined version of the original. I think the grainbill and the mash is perfect and don't think I would change this for batch 3. I think the only alteration in additional batches would be some slight changeup of hops depending upon availability & just random variation, and maybe tweaking the water profile some.

I got my 2009 Longshot sheets back including a nice little certificate that states my Category Winner: IPA Region: Western.
40.5/50 score, not so great judging comments as there weren't any suggestions for improvement. Oh well, I will continue to brew this beer and enter it into competitions!

I just got word that Hopinator batch 1 took 3rd place in the Larimer County Gnarly Barley brew festival for the category of "English & Imperial IPAs" I'm not really sure why they did these crazy custom categorizations, much less why they put English & IIPA together but AIPA separate. Not too shabby considering it was brewed in February!

I took silver in the 2009 Arizona Society of Homebrewers Oktoberfest with Hopinator batch 3. The guy that beat me used 100% homegrown chinook and magnum, I wish I could have tried that beer!

Hopinator batch 3 took Gold at the HBT BJCP competition.

Brewing this beer with almost all leaf hops is a bit of a pain. More or less hit my target gravity at 1.084.

Saq:

That is just an insane hop bill!!

Congrats on all the cudos this one has been getting for you. Interesting touch on the Melanoiden Malt. I just listened to a basicbrewing podcast a few weeks ago where Papazian said he liked to use a bit of that in his APA for color and flavor. Some day I may give that a try, maybe I'll cut the hops in half on the first go around just to cut back on the cost a bit.

Nicely done. You're doing the Western US region proud. :mug:

Thanks. Batch4 smells pretty insanely hoppy. I'll be kegging it tomorrow night, can't wait to try it.

Saq, I'm going to brew up your batch 3, mostly because I have all of those hops from the recent hopsdirect sale. Can you clarify the hop schedule for me, any of those mash or first wort additions, and for the dry hops, 14 days? I couldn't quite tell from the paste from Beersmith. Thanks!

I cleaned up the recipes, Beersmith text mode doesn't allow for enough room for full descriptions so they should be more readable now.

In other news I'm kegging this right now. Gravity reading 1.017 which means 79% attenuation and 8.7% ABV which is right where I want it. Its so hoppy it makes the fresh Hop Stoopid I'm having right now seem a little weak in comparison...

Yes, 14 all at once generally on the day fermentation should be done (day 7 or 9). If you have a conical or filter and dont mind wasting some trub you could do a multi-dryhop schedule which is fun too :)

So I see some fairly aggressive changes in batch 4. Nice to see you experimenting with the grain and hop bills. Looks like you upped the malt profile, changed from Marris to std 2-row, and lowerred the IBU's using some alternate hops and hop boil times. Also completely cut out the 30 min additions. I'd be interested to hear how much of an impact that has on the hop flavors with the 30 min additions moved to 15. Were you trying to move more of the bittering into a floral citrus flavor component?

The grain bill is more or less the same, just tweaking proportions and accounting for efficiency issues with this grain bill. I got like 60% efficiency on #2 and #3 so I upped the total volume grainbill and got about 70% which put my OG in the range I wanted.
I also switched from WLP001 to Pacman because WLP001 for me has only ever pulled 75% attenuation and Pacman pulled in nearly 80% which is what I want.

I think the Maris Otter brought too much grain flavor to the table and got in the way of the hops.

I'm certainly overkill on bitterness before I even throw in non-FWH90 hop additions, certainly beyond maximum IBU soluability levels so theres not really a difference in my mind between 220 and 260 IBU. Because of this I moved the 30 minute hop addition to 15 minutes for more flavor and aroma.

I missed the switch to Pacman. Pacman should definitely chew through a few more points of sugar for ya. That is one efficient bug.

Hopinator 4 took Best In Show at the 2009 Walk The Line - Barleywine competition, finally netting me my first BoS! I knew it was destined for greatness as soon as I poured my first pint, everything was finally *perfect*. The grainbill and OG were exactly where I wanted, and the addition of some hop extracts made this thing insanely bitter and hoppy. My only changes in the future will be switching to pellet for better utilization/less beer loss.

Congrats saq, that is awesome. Always interested in water, looks like you may have tweaked it for batch 4. Any details?

Yeah, thought I included that with the recipe. Here it is.

CA = 55 ppm
MG = 13 ppm
NA = 56 ppm
SO4 = 125 ppm
CL = 25 ppm
HCO3 = 149 ppm

I think I overdid the SO4/CL ratio a bit. I've usually done about 2.75-3:1 SO4:CL but this was 5:1. I have a pretty good feeling that Port does this extreme SO4:CL ratio in Hop15 and moreso in 2nd/3rd Anniversary IPAs because those are the only things remotely similar to the kind of bitterness you get here.

I was over at a beer tasting party with some buddies earlier and brought some Hopinator 4 and broke it out after drinking 5 other good IIPAs, everyone's response to the nose on this was "Jesus Christ thats hoppy!".

Brewing batch #5 tomorrow and batch #4 isn't even done yet. Need something really fresh to win the Big Beer Festival!

Will it be ready for the Dec. 30th deadline?

I'm curious to see what changes you made with batch #5. I will have to try and catch you in chat to find out.

Not much, still sticking with the basic idea that has been pretty honed as of v4.
Was out of the NB HopShot and Warrior so I used my new Apollo hops for bittering and also threw some in for flavor/aroma. Hit my target gravity more or less (1.083) and used Pacman like last time. Might use a hop aroma tab again since it was great like last time. This time its going into the conical (since its free) so I should get better use of my dry hops. I'll probably get a new hop back and put them in with some SS weights so I get good hop/beer contact. Oh and I backed off my SO4:CL ratio a bit, about 3.3:1 instead of 4.8:1.

I'll have v4 and v5 side by side so whichever one is better will go to the january comps :)

Brewed this one (version III) and just sent it to keg yesterday. Agree that the leaf hops are a PITA - kept clogging the racking cane. You also lose a fair amount of beer to the hops but what I tasted pre-carb tasted very good. Anxious to try this one in a week and really give it a try after it has had a good 3+ weeks under pressure. Montanaandy

I'd do a quick keg to keep as much of the hop freshness as you can.
Just set your regulator at serving PSI, get the keg down to serving temp, fill, disconnect, shake, reattach and fill, disconnect, shake, repeat a few times. After 4 or 5 times you will have perfectly carbonated beer that you can't overcarb.

Zac was asking about Hopinator 5 recipe, which had the slight change of Apollo hops and no NB hopshot. Here it is! This is pretty much Hopinator perfected, I think I'm done perfecting the recipe, its pretty much everything I want in my perfect IIPA. Thats not to say I won't get a hankerin for another totally different take on the IIPA, but this one pretty much is the be all end all for me.

Hopinator 5 took Silver at the Big Beers Belgians & Barleywines festival. I need to check out the score sheet and see what kept me back from taking it to another level before I think about changing the recipe.

Just saw the results page, congrats man! I need to try to set some time (and money for hops) aside to brew this thing!

Really enjoying the Hopinator III that I brewed. I am looking at Versions IV & V and they introduce one of my favorite hops (Citra) & yeast (PacMan). May try them down the line but may just stick with V3 since I really enjoy it. I used Wyeast 1056 when I brewed V3 - don't recall what the recipe called for but that is what I used/had on hand and it worked great. Montanaandy

This beer sounds great.
What if you added 1# of corn sugar like Pliny IIPA.... Did you consider and reject that idea? (if so, why? just curious-- it is not a critique).

I definitely would have if it was mashed at 156. Otherwise, I'd probably mash at 154 and still do it. At 156, I'd probably add 1/2 a lb of honey as well, haha.
