Halting conditioning?

I bottled my first batch just over a week ago (hooray!:ban:)

I want to halt conditioning in a bottle at 1 week so I can compare the taste to a fully-conditioned 3 week bottle. I might do one at 2 weeks as well.

Does anyone know if I just put one in the fridge will that work?
 
It will sort of work. What will happen is the yeast will slow down and mostly drop out of suspension. Things will keep going, but not as fast.

That will cause the beer to expand, which will bust your bottle (or pop the top off) I dunno about the effect on the taste.
 
Well, as long as it won't hurt the taste :D
I'll put one in the fridge and report back on the experiment results in a few weeks when the rest are done conditioning.
