So, I fermented in primary w/ 1056 and I am about to transfer to secondary and add the critters. Am I supposed to aerate after I transfer?
 
well, no. Some people use a wooden dowel instead of an airlock to give the bugs a chance to breathe, but aeration is not really a good thing. Just add the bugs.
 
I made a sour a couple of batches ago, but mine was an unintended infection :eek:
Down the drain it went.
