Thinking about making 5 gal of Blackberry Port next year. Was wondering if I can just use the synthetic corks I use to bottle my wine? Plan to age the Port for a couple of years.

Sure can.

The big difference between the two is the synthetic doesn't 'breath'. This basically means that any aging the wine does it does without the benefit of small amounts of oxygen that seep in through the cork. This also means that you don't have to leave your synthetic cork wine on its side while it ages. I have made two fortified wines, both corked synthetic. They mellowed very nicely and I can't say I missed the cork micro-ox.

Thanks..bought two fifths of Port for 33.00 and found I liked it...course will have to let it age for two years or so. Live in N.C. and in this State they sell 190 proof Everclear.. so live is good
