This was my first planned double IPA recipe. I had a few issues in reaching my desired OG (1.081 planned, 1.064 reached) but it came out pretty damn good. (error on my part during the mash)
I expected to reach 8.6% but instead reached 7.2%
6 Gallon Batch
OG 1.081
IBU 104.5
13 SRM
17lb Pale Malt 2 Row
3lb Cara-Pils/Dextrine
2lbs Crystal 60L
1lb Rye Malt
2oz Simcoe -60min
1oz Chinook -25min
1oz Cascade -20min
2oz Centennial -10min
1L yeast starter was made with a blend of White Labs California Ale (WLP001) and Pacific Ale (WLP041)
14 days in the primary
14 days in the secondary for dry hops
5oz Citra (wet)
5oz Simcoe (wet)
FG was 1.009
14 days in the keg and enjoy
This fits the bill of a NW IPA - piney, citrusy, and full of flavor
