Gotta tell you I did a variation (hop equivalant substitutions were made) of Westmalle Trappist Dubbel (Beer Captured, p 47) that is a killer!:rockin: Beer tastes like the description. Awesome!

I highly recommend it for an after dinner or winter brew.;)

How long have you been aging it? Did bottle or keg it? Did you harvest your yeast from a bottle of dubbel or did you find sucess with a Wyeast or White labs product?
I have been considering a clone for the Westmalle Trippel, but haven't been able to find the time to put in the research for a recipe.

I used the one from Beer Captured. It's been in bottles for a couple months. I just tried my first sample. Very pleased with the results.

I'd have to check my notes to give you any definitive reply.

PM me for a reminder of my notes. I'll get back to this thread/PM tonight.

Oh, I used WLP(###?) yeast form the vial.

So far I've brewed the Chimay Grande Reserve and the Brooklyn Black Chocolate Stout in 2003. I'll probably be finishing them off this year.
