So, I kegged for the first time last night. Put the keg and co2 tank in the fridge and I noticed the regulator was reading low, around 500psi. Will the cold temp affect the reading on the gauge? Should I be concerned?

No concern on the high pressure, what you see is normal. You may have to adjust the low-pressure output a couple times, that's also normal.

it doesn't affect the gauge, it affects the way CO2 wants to go from liquid to gas state. the cooler, the less it wants to convert, so pressure drops.

leave a CO2 tank in direct sun, and it can blow its safety valve as pressure increases.
