Is a 1X thick enough for the collar? The freezer I am using has an odd lip around the top that will prevent me from using a 2X.... I can maybe sandwich two boards together ( raising the inside one up a bit) if a 1X is too thin.

I used 1x on mine so I could add some insulation. No issues at all.
Yup my freezer can't use more than 1" and it is fine. Just be careful opening and closing it as it is awful thin and slinging it open/closed would be a bad thing.

Remember that a 2x6 is really only 1.5" thick 
your 1x6 will be slightly less than 3/4" thick which is pretty thin if you are not careful when opening the lid, or letting it spring up.
