Rhubarb Custard Pie

3 eggs, slightly beaten
3 tablespoons milk
2 cups granulated sugar (less if you want it a bit tart)
1/4 cup flour
4 cups (6-7 stalks) rhubarb, chopped
pastry for 2 crust pie

Mix together eggs and milk. Stir in sugar and flour and then mix in rhubarb. Pour into pastry lined pan. Cover with the top crust- you can do it as a lattice top, or a regular crust. Cut slits to vent if not doing a lattice top. Bake at 375 for 50-60 minutes until nicely browned. This is also very good with a top crust "crumb" topping made with brown sugar, flour, butter.

I just did regular pie crust with slits to vent. This is so easy, and it's my daughters favorite dessert. My son's favorite dessert is coming up tomorrow- rhubarb upside down cake.

Then make the rhubarb wine! That's really my best rhubarb recipe........

(I'll post the cake recipe when I dig it out. It's super easy, using box cake mix).
