I'm doing an all grain recipe that calls for 1 lb. of munich malt. Can I switch this out with something else? HBS doesn't have it. I'm making an American Amber Ale. Should I find another recipe, or because it's only 1 pound, would there be a decent substitute?

vienna is pretty close. Basically you want something to add a little bit of maltiness and a bit of color (but not much). My guess is the base grain is 2 row and the munich is an 'enhancer'.

I'd say Vienna. Less toasting than Munich, but should work in an Amber Ale.

Edit: Damn, you beat me to it :(

Vienna, but bump it to 1.5 lbs and cut the base malt 1/2 lb. If you can't get Vienna either, see if there's any Aromatic (but only 1/2 lb).

Munich definitely is a good malt. Like others have said, Vienna is close. Or possibly a combination of Victory and Biscuit.
