Hopefully I can get some quick insight on this because tomorrow morning I will be picking up materials for a 11 gallon Imperial IPA recipe. This is the recipe I have been fiddling with.
35 LBS US 2Row
2.0 LBS Caramel/Crystal 40L
Mash with 10 gallons at 150F, sparge with 10 gallons at 170F. 90 minute boil.
Hop Schedule:
90 minute: 8oz Simcoe(leaf) - 126.4 IBU
5 minute: 3oz Citra(pellet) - 9.7 IBU
0 minute: 3oz Citra(pellet) - 0 IBU
Total IBU: 136.3
Dry Hop: 4oz Citra(pellet), 2oz Simcoe(leaf)
I am looking for a very, very big citrus/pine/floral punch in the face on this guy and I always question the need for more than 2 hop varieties per beer but at the same time I don't want to be "that guy" when I go in to buy hops tomorrow and I almost buy them out. I have some cascade laying around and I am wondering if I should insert it somewhere into this recipe since the simcoe and citra are asserting themselves rather aggressively.
Should I even bother with Simcoe in the dryhop? Citra is by far my favorite hop strain but I am wondering how well Simcoe will complement it...if at all in a dryhop setting.
