I am brewing on Tuesday.
11 pounds Belgium Pale
.5oz Simcoe FWH
.5 oz Simcoe 45 min
.5 oz Simcoe Dry hop
Now, I was going to use Notty, but Notty has been naughty, and working like I want(long lag time)
So, the LHBS only carries Wyeast Smack packs.....which should I use, or more to the point what would you use and why....
Think I might want a more fruity profile from the yeast...but not sure.
