Big IPA with limited ingredients...help!

Hi all,

I'm new here to the forums and was hoping on a bit of advice/help from all you on here.

I've been homebrewing for about a year with a friend of mine, just doing extract batches and usually only doing pre-made ingredient kits.

We've managed to acquire a bunch of random stuff from either visits to homebrew shops or kits we didn't use. We're hoping to use it all to make a big imperial style IPA, but I wanted to ask you guys about it first.

I have a few recipes I've run through BeerSmith using these ingredients, but of course I have no idea how it's actually going to taste.

Here's the ingredients we have to work with:

Malt:
Cystal 60L Malt (1lb) mixed with 2-Row Malt (.5lb)--steeping grains
Pale extract (liquid) (7lb)
Extra pale extract (liquid) (5lb) and Wheat extract (liquid) (2lb)--mixed together (from a kit)
Briess Amber Extract (dry) 3lbs

Hops:
4oz Brewers Gold (9.3aa)
2oz Northern Brewer (8.1aa)
1oz Amarillo (7.5aa)
1oz Amarillo (7.0aa)
1oz Cascade (7.5aa)
1oz Perle (7.1aa)
1oz Willamette (5.1aa)
1oz Fuggle (4.8aa)
1oz Tettnang (3.9aa)
1oz Argentinian Cascade (3.2aa)

Yeast:
2 packs of Nottingham (dry)
(we may have some other yeast at his house... I can't remember)

Any ideas on what we could do with all this, as far as IPAs go? Any hops that we should or shouldn't use?

Any help would be very much appreciated.

You got the stuff to make a really nice IPA. I like the NB for bitter and Amarillo and cascade and Willamette combo.
 
You could give this a try:

Batch Size: 5.50 gal
Boil Size: 7.54 gal
Estimated OG: 1.061 SG
Estimated Color: 9.2 SRM
Estimated IBU: 63.1 IBU
Brewhouse Efficiency: 72.00 %
Boil Time: 60 Minutes

21.00 gm Brewer's Gold [9.30 %] (60 min) Hops 28.0 IBU
56.70 gm Amarillo Gold [8.50 %] (Dry Hop 14 days) Hops -
28.30 gm Brewer's Gold [9.30 %] (30 min) Hops 19.3 IBU
28.30 gm Northern Brewer [8.10 %] (15 min) Hops 8.8 IBU
28.30 gm Cascade [7.20 %] (5 min) Hops 4.9 IBU
28.30 gm Cascade [3.20 %] (1 min) Hops 2.2 IBU
2 Pkgs Nottingham (Danstar #-) Yeast-Ale

-only use 2 pounds of the Pale LME
-use all of the extra pale LME and wheat LME mix
-mix the c-60/base malt well, and then weigh out half and use that
-Brewer's gold is a great bittering hop. Only weigh out 21g for the 60m addition though.
-This is all based on adding extract at boil. If you want to do late extract additions, let me know.
