What do you think of brewing chocolate in your beer? How do you have to handle it in fermentation? What do you think of the flavor pairing? Better in a stout, a porter, or (surprise me) a weissbier, etc.?
 
I have made several chocolate stouts and enjoyed them. SWMBO has a chocolate wine she enjoys and I am playing around with an idea for a hint of chocolate mead.

My buddy brews a white chocolate stout (won't share the recipe) that is like a desert beer, it is so tasty :p
