So, since I got the Hella Bock screwgie, I was looking up what Wyeast PC releases were coming this quarter, and saw Thames Valley II. Good, ESB it is, then...

so I was reading, and saw this:

"A thorough diacetyl rest is recommended after fermentation is complete"

d-rest for ales? Is this common? How is this done, do you just leave it, raise the temp, or...?

Also, Pacman is coming out of hiding.

Basically just let it sit an extra few days in the primary after the FG is reached. The fermentation temperature of ales is sufficient for cleaning up diacetyl.
