Help on making an Australian/NZ beer

Can anyone steer me in a good direction for a good base malt and yeast to use for an IPA beer but with Aussie/Kiwi ingredients. The hops are the easy part, if you can find them.
 
Copers or ringwood yeast.
90% pale
5% pale crystal and 5% cane sugar
It works a treat!
 
The Australian Ale yeast (wlp009) is available now from WhiteLabs and would make a nice IPA. It is the same yeast used in their sparkling and pale ale. It is different than the stuff that comes in the packets.
