This is a wit style beer I made my wife last summer (before I ever heard of this forum). It turned out nice, and she absolutely loved it. It’s very low on bitterness (true to style), but higher gravity than your typical wit. Spices are pretty typical, with the addition of fresh-grated ginger.
This style is one of the best fits for using sorghum syrup, because that infamous citrus twang you get blends right is. I know that sentiment has been echoed through this forum before…
Here’s what was wrong with this batch; yes, even though my wife loved it (the important part) it did have faults:
1. The lautering system needed work – quinoa is small and amaranth is tiny. They gunked up my primitive system and some grain ended up in the boil. (this problem has since been solved – I have a much better mash/lauter tun, and can use hulls when needed)
2. No head retention
3. Body was too light and lacked character. All the adjuncts and spices shone through nicely, but it needed more of a “backbone” to hang it on
4. Took FOREVER to ferment (well, 2 months)
Furthermore, knowing what I know now there must have been starches in that beer, although the final gravity was pretty much on target. Who knows what kind of effect that had…
