I want to brew a hefe that has a really strong head formation and retention. Half my grist will be wheat, which will do a lot for it. I'm doing a single step infusion at 156 which will help and I'm adding 1/2lb of Carafoam to the batch. Any other tips/tricks that DON'T include adding foaming agents to the batch? Thanks!

?

Check out the last thread at the bottom of the page. Wheats are kind of delicate in my mind.

I'm not sure what you can do with yeast/hops changes or adding cara-components before you notice the beer changing character too much.

Just add flaked barley. It's tasteless. Or better yet flaked wheat.

IMO, 156 for a hefe seems very high...hefe's, at least the ones I've had, are usually pretty dry.
