Just take your favorite IPA recipe and replace the base pale extract (or grains) with wheat. Or take a wheat beer you like and hop it out. Both sound fun. New recipes. Good times. Profit. :)
 
Made one the other day. It was 6# 60/40 wheat LME and handfulls of cluster late in the game. Handfulls instead of ounces because I did not bring my scale.
Think there was about 5 1/2 ounces in the bag when I started and I left about an ounce to dryhop:mug:
 
Here's one of mine. It's for 15 gallons so scale accordingly. Replace the rye with wheat if that's not your thing:

Looking for a Hoppy Wheat . . . anyone ever try?
American Wheat/Rye is one of my regulars.

40% Wheat
40% 2-row
10% Rye
10% Sugar
Chico Yeast (US-05, Wy1056 or WPL001)

5% ABV
40 IBU (mostly Amarillo)

We drink it all year round, but it's a great summer beer.
Brewing a batch this weekend.
 
I brewed a great recipe last summer based on New Glarus Crack'd Wheat. Amarillo and Cascade for aroma, equal parts pils/wheat, bit of CaraVienna to leave a hint of sweetness.

Planning on doing something similar in a few weeks. I'll make 8 gallons of ~1.050 wort, take 5 gallons and hop with Riwaka and ferment with 3068, then take 3 gallons and water it down to 1.030, hop with Amarillo and Nelson Sauvin, and ferment with 1056. Should be nice to have two different takes on hoppy wheat beer.
 
Here's the one I brewed a little while back - need to make it again, since the wife says it's her favorite beer I've ever made. Next time I'll probably sub something neutral like Magnum for the Simcoe (just sort of a waste to use Simcoe for a 60min addition), and you may have trouble finding Citra right now...

none of the recipes mentioned (though they sound awesome) using Saaz... I'd probably use a ton of saaz in late addition/secondary with a wheat beer since the Saaz has such a spicy profile it'd work well with the phenols from a hefe yeast.

I've heard from others this works well if you like the spiciness of the saaz.
 
Try any 60/40 wheat to pale bittered/flavored/dryhopped with Sorachi Ace. It is a very interesting hop in wheat beers and it has been documented here in the past.

25g Sorachi Ace 10.9%AA @ 20 mins
25g Sorachi Ace 10.9%AA @ 5 minutes
25g Sorachi Ace 10.9%AA @ Flameout

28IBU

Fermented with US-05 @ 16-18C

Sorachi Ace works wonderfully in this kind of thing. It's a great, easy drinking summer beer.
 
I just kegged a hoppy wheat that came out awesome. I dont have the recipe with me, but it was around 5lbs 2-row, 4lbs wheat, 1.5 lbs rye. FWH Sorachi Ace, then a bunch of Sorachi Ace, Citra, and Amarillo in the last 15 minutes. Dry hopped with .75 oz of each also. 5.5-5.8%, mid 50 ibus.

I am pretty sure Gumballhead is all Amarillo, but that recipe looks good also.

Another good hoppy wheat is Lagunitas Little Sumpin Sumpin. It was recently cloned on the Jamil show, there is a long thread about it.
 
I just brewed the Bee Cave Hefe recipe that's popular on here but did 5 oz of Amarillo all between 20 minutes and flameout. The beer looks beautiful and the hop profile is huge but I used hefe yeast and the admittedly green sample I had last night (only a week of bottle carbing) tasted a little weird. Hoping the flavors come together a little better in the next couple weeks.
 
Thats my understanding also about gumballhead is its all amarillo and you have no wheat in it. I did a gumballhead take pieced it together from recipes here and there.

Pale malt 4 LBS
Wheat extract 3 LBS
Crystal grains 60 1LB

.5 Magnum 60
.5 Perle 30
.5 Cascade 15
.5 Cascade 0
1. Cascade dry

I was going to use the California but I decided to use
White Labs 351

so well see in a couple of weeks or so....

I made this morning....
 
I finally bottled/Kegged that last batch and it tasted pretty damn good... As every batch, bottled a 6pk and keg the rest....

So I decided to continue on the Hoppy Wheat so I went with a smaller batch this time though 2.5 Gallon.

6 LBS Wheat Malt
.8 Magnum @60
.25 Simcoe @30
.65 Centennial @15
.50 Cascade @5
.50 Amarillo @ flame out...

I had only some dry yeast and WLP 001/351 on hand so I pitch the whole 351, I did use some Yeast Nutrient as well because the predicted OG 1.086 :rockin:
I will probably leave in about 3-4 weeks since I finally have reached the point where I have a few beers available.
