Hey everyone, on my second time brewing. Brewing from extract a german dark beer. SG before pitching the yeast was 1.40. How often do I check a hydrometer reading and when I do, do I dump the sample or can I put it back in?
 
Give it at least a week maybe longer.

Always dump the sample or you risk infection.

Of course by dump I mean consume......
 
Check it for the first time when you think it's ready, I'd say 3 weeks, then check it after 3 days, drink the samples.
 
Wait 10 to 14 days(some will recommend3 weeks), then take a reading. If it is near your FG, take another reading a few days later. If they match you're ready to go.

Putting your sample back in risks infection, so don't do that. But don't dump it either! What a waste of delicious beer. You should always taste the sample so you can learn how the beer changes, and also see if it is propely conditioned.
