So the wires on my probe came loose from the housing. Anyone know which it + and which is -? There's a yellow and a red.

If I were to guess the red is the (-) and the yellow is the (+). You would know right away if they were hooked up wrong. If they were hooked up backwards the thermcouple would indicate a falling temperature when the temperature is indeed rising and vice versa.

Great chart Kevin! Yup, looks like the red is (-).
We go through a bit of the K thermocouple wire on the steam power generation jobs for thermal stress relieving, spot weld the wires to the pipe and attach to the heating controllers. You dont want a weld failure in a system that boils nearly 1 million pounds of water an hour @2,000 PSI-1,000 deg F. for a 450 Mw steam turbine-generator set.
